7 Minute Zucchini 4 med Zucchini peeled and grated coarsely 1 tsp salt 1/2 lb fresh mushrooms 1/4 cup butter 1/4 cup onions chopped 1 clove garlic minced 1/2 cup sour cream 1 tbs basil Let the grated zucchini stand to bleed out juice. Squeeze all liquid out of zucchini (I grate it into a sieve). Heat mushrooms in a skillet removing any liquid that cooks out. Add butter, garlic and onions, cooking until onions are just done, not fried. Add zucchini and heat. Add sour cream and basil and warm. Really delicious!
