Marinated Carrots
1 bunch large carrots
2 cloves of garlic, sliced
1/2 teaspoon salt
1/2 teaspoon pepper
1/4 cup of olive oil
2 tablespoons wine vinegar
1 teaspoon oregano
Scrape the carrots and cut into thick slices. Boil in water for 10
minutes or until tender. Do not overcook. Drain well. Place in a bowl
with garlic, salt, pepper, olive oil, vinegar and oregano, stirring
while mixing. Let stand in marinade 12 hours before serving.
