When we try to print from both an Ubuntu and Win7 machine, with the
settings set to generate a pdf that can be printed to local printers, we
see no x2o cups printers and neither evince on Ubuntu nor acrobat on
Win7 start.

Out of curiosity, are your X2go servers in the same network (not necessarily the same IP subnet, just part of your "internal" network) as the clients, and are you dealing with a static client setting (as opposed to visitors bringing their own devices and wanting to print)?

If so, I would install the LPR service on Windows, allow CUPS on the Ubuntu clients to talk to the CUPS server on your x2go server, set up the printers on the server-sided CUPS, and bypass the X2go printing method entirely.

Of course, if you're connecting via the internet and not using a VPN connection, this isn't viable for security reasons.
