I may be wrong, but I think that mplayer, at least, will be fine with a 1024x768 display resolution. It will deal with putting black bars at the top and bottom and scaling the video appropriately to maintain its aspect ratio. So, you should just stick with 1024x768 as the display res, and let mplayer deal with the different aspect ratio.
