After some debate on this list I have been able to successfully implement 
an IMAP solution for XMail.
After some discussion I moved away from Courier IMAP to a application named 
Dovecot.

I will be releasing some docs and a script to convert the xmail password 
file to one that is usable by dovecot etc.

I am in the process of doing some testing etc and making sure there are no 
funnies, but so far its working like a charm.

As XMail leaves the terminating <CRLF>  tags on each line for messages 
written do disk instead of only using them for the transport which is an 
RFC requirement, Courier expects to read Unix formatted messages from the 
maildir, ie messages terminating with just <LF>. Dovecot is the only IMAP 
server I have been able to use that will actually read both formats.

I wont go in to much more detail, but basically if you want to run IMAP 
successfully with XMail, you will need to use Dovecot... well at least on 
the Unix platform.
