Just went through this last night.

1) Setup a second DNS MX entry for you domain with a higher numbered
entry pointing to your secondary server
2) Setup a custom domain on your secondary server with an "smtprelay"
statement pointing to your primary server
3) Adjust the smail command line setting that determine how long xmail
will try to send undelivered mail and how often it tries.
4) done

Your secondary server will keep trying to deliver any mail it has for
your primary server based upon the smail command line settings. So when
your primary comes back online any mail the secondary has for it will be
delivered.

You can't connect via pop to the secondary server as it will not have
any accounts setup, it's just holding the mail and then relaying it to
the primary when it becomes available. 

You can if you want setup virus and spam scanning on the secondary so
that it reduces what has to be delivered to the primary. Plus some
spammers like to deliver mail to secondary servers thinking that only
the primary scans and they might get around scanners by going to the
secondaries.
