I don't have a definitive answer, but my experience is even worse. The Dell server's I've tried adding an adapter to don't even want to boot correctly. So long as you have the same bus (such as PCI), the Dell servers should see the second adapter. They should disable the on-board adapter by default, but you can force them to do this with a jumper (this is how the old Dells work, at any rate).
