My understanding from this Apple article
<http://support.apple.com/kb/HT2483> is that an iPhone can sync both to a
MobileMe account and an Exchange account at the same time. I don't believe
this was always the case.

I've gone back and re-read your original question and while you've
explained a lot about *what* you're doing, I didn't really see the *why*.
So, I'll offer my suggestion.

Keep it simple. Use one or the other, but not both.

Although I have both a MobileMe account and a work Exchange account, I use
one service for my calendar and contacts. I've chosen to use my Exchange
account because syncing data between Entourage and my iPhone through
Exchange is very reliable for me. I also get the advantage of syncing
multiple calendars and Exchange Contacts lists. You cannot, however, sync
a calendar or Contacts list that is not part of your Exchange account
(i.e. items in public folders or shared items).

Hope this helps!
