This makes sense. You needed to do one more step, which was to kill the
hidden Database Daemon process.

The Database Daemon is part of Office. It runs while Entourage is running
and it runs when Entourage is not running if you have Office Reminders or
My Day enabled. It is connected to the Database all the time, which is why
it wouldn¹t let go of the Database on your Desktop.

You can quit the Database Daemon manually by looking for it in the
Activity Monitor utility or a simply logout or restart will work just as
well. The Daemon will restart the next time you log in or launch
Entourage. It will again look to the Microsoft User Data folder in your
Documents folder.
