You can use the Activity monitor to quit it (after you made sure all the other
Office applications are not running), or use a script as Diane was saying. The
script she mentioned quits all Office applications - including the daemon.
Though, really, I would not back it up using Time Machine. Incremental backups
are not the easiest thing to manage for a big monolithic database.
