I've created a how-to for anyone interested in implementing email based event acknowledgment, using Procmail and Postfix. I've been developing this for the past week and I feel that it's pretty solid at this point. If you're interested, give it a shot and let me know what you think.
Just a note that this will only work if you can route email back to your Zenoss servers from whatever email address(es) you receive alerts at. That might be a tricky/sticky point for some of you.
