Apologies, and you can all flame the heck out of me - but I did resolve this issue.
I just can't remember everything I did to actually get it working. The Zenoss installer I used is broken (currently available download as of this date). It works fine for the core - but it doesn't set environment variables and has a broken install of some python libraries. I know I had to re-create it's home directory, set the environment variables script to run properly, and update python in the /usr/local/zenoss directory to work. It took nearly two days of constant messing around to get it working. The key thing though is that the asterisk monitoring does not work properly.
