You'll definitely have to do a source install. That said, the source install guide for OSX that we used before the stack installer was available is here: http://dev.zenoss.org/trac/browser/trunk/inst/docs/INSTALL_Mac.txt
It may be a little dated, for the SVN checkout steps and install steps, use: svn co http://dev.zenoss.org/svn/branches/zenoss-2.3.x/inst zenossinst and run the install.sh with this: SVNTAG=branches/zenoss-2.3.x ./install.sh This will put you on the latest on the stable tree. Report back if you find any issues, I run from source on a G4 Powerbook, but I run Debian PPC.
