I do it all the time.  You will need the meta-package build-essential to
be installed.  I would also install kernel-package as it will produce
some nice debs for you to install.

Grab the latest tar.bz from kernel.org, uncompress, apply any patches
(like the rt one), configure the options and modules that you want, then
instead of make do:
sudo make-kpkg --initrd kernel_image kernel_headers
