There is a preset for Youtube and Vimeo on CS5, either seem to be fine and I
have never had any problems with them.

You can either cut the audio tracks before and after the points where they
need to be in/out and mute for out, or use keyframes to adjust the audio as
you go.  Either way will work I believe, but have not had the need for
keyframes myself yet.  You can either cut the video and audio or seperate
the audio/video with the usual options (can't remember at the moment).  The
audio once seperated from the rest of the clip can be muted in this way.
