I would give a dozen tamales 6 red 6 green.   I only eat red ones.    The
secret is the maza and how it's prepared... My wife uses crock pot to cook
pork..slow process but meat is tender and thoroughly cooked... She will not
allow me to take pictures of her preparing the maza and stuffing the
prepared meat into tamale dough and then husks..   Doesn't want to called
tamalera.   Then into large steamer in picture.   About an hour in steam
and they are ready.   She makes posole as well... Pork, garbanzo, and add
radishes with angel hair Cole slaw.... That and Tecate is why I stay 205 to
215lbs.
