OK, so amanda simply cannot talk to the client, period (as indicated by no 
/tmp/amanda entries on the clients).  Stuff to check:

1) You did send a SIGHUP to inetd on the clients after you edited 
   inetd.conf, right?

2) You can ping/ssh/etc to the client from the server, right?

4) Are there any relevant entries in /var/log/{messages,secure} on the 
   clients?

5) Is amandad from the server an allowed service in /etc/hosts.allow on 
   the clients?

5) Are you *sure* that there are no ipchains rules in the way.  Unless you 
   tell it not to, 7.1 sets up ipchains rules that will interfere with 
   amanda.  What are the contents of /etc/sysconfig/ipchains on the 
   server?  This probably isn't causing the problem above, but it could
   come into play later.
