So I installed

update-cm-5.0.7.1-N1-signed

over my stock Nexus One phone, and now all of the files being
extracted by the extract-files.sh is able to pull all required files
from the phone...

So, apparently the stock Nexus One does not have everything that the
CM build is looking for... build completed successfully...
