The operative phrase here of course is "GS/OS applications." ProDOS is needed to launch a lot of Apple II software, such as AppleWorks. Since there's no HFS utilities that I know of that run on a GS, and since most if not all GS/OS applications are happy running from a ProDOS partition, I think the idea of having your software and data files in a ProDOS partition that you can back up, and use the HFS mostly for storage is probably the safer move.. (I think you can use a Mac to back up a GS's HFS partition, but I've never tried it.)
