Hi, I have done many upgrades using new hardware.
I have usually chosen to do a fresh install, and then import the def-file with the application. I usually skip all system forms and manually modify the new install with any changes that has been made in the old system. After this, I use RRR|Chive to move the data from production to the new server. This may take up to a week, depending on the size of your system, but the final incremental transfer of data usually takes less than an hour. This give me a very clean new system. I have done this between Unix and Windows in both directions, and with the same/similar platform.
