Just make up a domain name (that doesn't exist). Add it to your Local domains line under the Relaying section in ASSP. Your Exchange server will know it's not local and will send it out just like any other email. ASSP will pick it up knowing that it's a local domain. ASSP will take care of it from there assuming the "Email Interface" section is setup properly.
