For starters, you may want to consider upgrading the firmware to version 3.x 
see below for details:

Configuring the polycom soundstation phones via the config files would be the 
best way to go, if you prefer to do zero touch configuration, polycom allows 
for this in a clean and efficient way, the time spent to configure the phones 
via config files instead of the GUI is well worth the time not just for initial 
deployment but also for long term firmware updates, config changes and such.

Are you able to attach part of your polycom phones sip configuration file 
sip.cfg (not from asterisk) but from your phone
