I don't think you did this step correctly and that's why it will not boot Linux. com.apple.Boot.plist does not just contain a single line, it's more complex.

"ls -la tmp", bet there's only com.apple.Boot.plist there. nuke it (rm tmp/com.apple.Boot.plist).

mount /dev/sdb2 tmp
cat tmp/com.apple.Boot.plist

this better not error and should exist.

nano tmp/com.apple.Boot.plist

"change patchstick to auto" then exit nano saving changes. umount tmp when done.

I see root (hd1,4), http://wiki.xbmc.org/index.php?title=HOW-TO_install_a_Miminal_Ubuntu_and_XBMC_with_sound_over_HDMI_on_the_AppleTV says root (hd0,4) which makes more sense.
