Csound with a midi keyboard is fun. I don't know how productive it is, as my interest is DSP stuff along the lines of synthizer, not getting music out. Read the manual. If you don't feel lost, it's for you. Experimenting will tell you a lot more than I can here, though I will say that half these languages are the kind of thing you need a specialized background or the right kind of experiences to get much out of.
