EFI (Extensible Firmware Interface) is basically the replacement for BIOS, featuring modern runtime services for the operating system, a space for operating systems to dump their loaders into and register, and a new partition table format that allows lots of partitions, and of sizes bigger than 2 TB each. Intel Macs use it, albeit with that special Apple flavour that guarantees incompatibilities with standards-compliant software. UEFI is essentially EFI 2, but Macs only use EFI 1. BootCamp uses BIOS emulation to start and run Windows, even Windows Vista or 7 which natively support EFI, and the hardware profile is different whether or not you're booted into EFI or BIOS; since Apple wanted Windows to install cleanly without extra drivers, one way these are different is that disks are emulated using IDE in BIOS mode instead of being passed through as SATA in EFI mode, so it is to your advantage to use EFI mode whenever possible.
