AFAIK, those fields propagate when a document is created from a
template, but I don't know whether updating the template (or applying a
different one) changes those fields in an existing document; I haven't
tried it.

We used those for awhile long ago, but found problems when the chapters
were compiled into a master doc. I don't recall the details; I might
remember later.
