I use whatever I have on hand so just about any of the ingredients I could leave out. This is what I did a few weeks ago 3 - 12 oz. Cans of chicken broth 2 potatoes cut in large chunks 2 carrots 1 large onion Some garlic cloves A 7-8 inch link of Choecio sliced 1 lb. of fresh kale cut in strips. I also used a large table spoon of crushed red pepper (only if you like a real zingy soup) You could add a 12 oz. can of red Kidney beans (rinse them off before adding) Cook everything except the beans and kale (you may have to add another can of chicken broth) When the first ingredients are done add the beans and then the kale last. Simmer until the kale is well done. You might say I cook by the seat of my pants generally I do not measure and leave some things out and add others. An example you could use beef broth instead of chicken broth. Green beans are a good thing to add along with cabbage. Just look in the fridge and add any left overs you think would work. As for the kale soup I made a few weeks ago it was gone by noon the next day. It was good.
