I've found that more than 2 backups simultaneously tends to bog everything
down with Disk I/O. I don't know what the baseline for your system is like,
so I can't judge much based on that vmstat output.

I'd suggest running 2 backups simultaneously, and see if the disk I/O is
greater, lesser, or similar. Then try it with 1 backup.

There are also some journaling options you can tweak to get better ext3
performance, (at the risk of increased ease of corruption) and you might
even consider moving the journal to another device.
