These scripts uses BackupPC_tarPCCopy to copy the pc directory, which uses just a few RAM, the other data (pool, cpool and logs) are rsync in three times (one time for the logs and all the little data, one time for cpool and a last time for pool, this way, even with quite hudge pool, youy won't run out of ram) I'll post as soon as it'll be ready for testing. These scripts has been written for SME server which is centOS based (I've packaged BackupPC for this distro), so maybe they'll need some tweak to work correctly.)
