Found from looking right through a very extensive log at level 6 that a lot of files (66,000 of a total of 75,000 which was a total of only 100MB of the total 7.5GB) were located in a temp folder. I thought I had filtered them all out with my exclude files but obviously I missed this one (Users/[Username]/Local/Temp. I think that for what ever reason it would fail on one of these files and just hang in limbo for a long time and often then not wake back up.
I have added the filter for this directory and a incremental backup for the past two days has taken 20 and 23 minutes respectively. Will wait and see how a full backup goes when it is due but suspect that this may have been the cause of the problems. Thanks to all for your assistance with this.
