when I do that, I am asked whether [email protected] should be the
principal address and it is added to "Sam Robb" and he is displayed.

indeed:
(mail-extract-address-components "\"Sam [guest]\" <[email protected]>")
==> ("Sam" "[email protected]")
however, I don't understand why "Sam" matches "Sam Robb".
