This is why I was looking to BBEdit projects as what seemed
like a good framework for including an ePub/zip file plus
auxiliary files that are not part of the ePub itself.
Projects are a good tool for this -- but dropping an ePub file
on BBEdit doesn't create a project; rather it opens a window for
browsing the Zip file that is the ePub. Like the windows you get
when using File -> New -> Disk Browser, it's primarily intended
for browsing, but you can edit one file at a time if you wish.
The larger picture would involve putting the ePub's source
materials into a project. This borders on trivial to do; unzip
the ePub, then drop the resulting folder on BBEdit and then use
File -> Save As Project. Thereafter you can edit the materials,
add and delete files, and when you're ready, just go into the
Finder and zip the folder and rename it. And any ancillary files
that are not intended for the ePub can go wherever you like, and
be added to the project as separate entities.
Some day there may be more integrated tools for generating ePub
files (including manifests, structural validation, etc) using
project documents as a basis. That day is not today; but it's
probably not terribly far off either. :-)

Someday I'll look back on all this and laugh... until they
