I think Ubuntu is lighter, because no recent version of OSX has been designed to run on a G4, while Ubuntu had some success as a netbook OS.
In any case, I think you want the fastest possible CPU. A G4 wouldn't run a smartphone... And 1GB RAM should be plenty, esp. If you choose to run a server config without GUI. Just avoid Gnome if you insist on a GUI.
