CCRA (FKA Revenue Canada) uses it. They are not fortune 500, but they're a very large organization. Sunlabs uses it. Hundreds of educational institutions use it, from universities to small school boards (this is where you are most likely to find a good case study).
It should be noted that Asterisk was not developed by hobbyists. Not even counting Digium, the folks that contribute code to Asterisk are doing it mostly for business reasons, not for fun. The fact that there is a lot of love there is a bonus. Still, I agree that it'd be nice to have more street cred, but this is the same path that Linux had to follow. No CTO/CIO would touch it, until one day they found out that they were ALL running it. Then all of a sudden they were telling each other how smart they were for being visionary.
