I would say a 80 000 lambs or more are butchered in our province  with old fashion knifes, as the troath is much faster cut.
Moselms as Ethnic groups refuse to use stainless steel and never seen anybody sick because of that.The law require stain less steel knifes, but we have already so many bylaws that non is looking anymore at that.
 
My self I learned butchering in different countries and with stain less steel knifes, but they have to be resharpen too often and are not as sharp.
 
What is the reason to use only stain-less steel ?
