I never castrate my rams and I butcher them at 9-12 months of age. Their meat is tender and mild, just as the ewes' meat is. I doubt you will have any gamey or muttony flavor if your sheep are true hair sheep. I've also read that it is a good idea to eliminate as much stress as possible prior to killing the sheep. Apparently, adrenaline and hormones released as a function of stress can add an unwelcome flavor to the meat. Unless I'm willing to kill my sheep myself and then transport their carcasses to a butcher, I'm sorta stuck with hauling them in a trailer for 45 minutes to the closest meat processer. That is bound to cause stress, as is the noise and smells coming from the building. But I'm quite happy with the flavor, even with stressed animals.
