You do not have to rip pages out of books. Most copy shops like Kinko's have a machine that will cut the binding off in just a few seconds. Some Kinko's will cut bindings off of books for customers who are blind for free. When you are done scanning the book, you can have a comb binding put back on the book. If it is a college text book, you can sell it as a used text with this binding on it.
As far as getting your scanner to work in duplex mode, my info is dated, so I'm going to leave that questions for other experts on this list. This is a portable and extremely small camera that sits on a tripod over an open book. Crucially this device also includes a motion detector which will recognise when you have turned the page of a book. Apparently in this book mode of scanning you can make 20 2 page scans a minute. That is 40 pages. It is very expensive at the moment and I think it is only feasible to get through Access to Work or Disabled Student's Allowance but this does seem to be the future of scanning for people with visual impairment.
