Since the stout is going to be so full of roasted, dark, heavy flavours,
I don't think the exact yeast matters nearly as much as in some other
styles. I have used various ale yeasts (1028 London comes to mind).

The one that gave me a silver medal in DM 2003 was brewed on brewferms
cheap dry yeast, which is normally not counted as a very interesting
yeast.
