The solution to this is as old as bureaucracy itself: Cheat. Make the
beer the best way you can, and afterwards adjust the beercalc numbers so
that they won't be hurting you.

I am sure this was not Dan's intention, but that many creative brewers
will end up tuning the numbers a bit.  Of course the judges are going to
notice if a porter claims to be a pale pilsner, but small uncertainties
in EBC, IBU, and gravities can well be explained away as errors in
estimation and uncertain processes...
