I warm my water a bit over (something like 80 C), and adjust the volume
to get the temperature I need. In other words, I pour it in slowly, and
measure eveyr now and then. If it looks too thick, I can always add some
more water. All too often I get it too cold, that's why I have boiling
water at hand...

Even if I miss a degree (or seven),

  it will be beer anyway

P.S. I find it quite hard to measurethe temperature. If I take 5
readings at 5 different places, I get 5 different temperatures. So I
don't sweat a few degrees up or down...
