So, OG 1057, aiming at 1013, 5.2% alc. If you ferment it to 0997, you
get something like 7.3& alcohol, and a fairly dry beer.

Dry and alcoholic is what you should expect. Give it some time to
mature, and it may well balance out all right. Maybe not to win medals
at DM, but certainly drinkable!

That should not have much to do with it. As long as there is enough
yeast it should be fine. Those 7% of alcohol should not be nearly enough
to disturb the yeast. Play safe and give it a bit more time for
carbonation.
