You probably get a few fine technical explanations that show that you
can't make good beer without precise Ph control and a wholo lot of other
hight-tech stuff. Read them, and learn from them - but don't believe you
really *need* any of that. Beer has been brewed centuries before anyone
had heard of Ph. I have not (yet?) measured Ph a single time in my
brews, and some of them have turned out quite fine.
