Yes, you should buy another of those 30 liter fermenters. If you get the
process well started, the wild fermentation will produce a lot of foam
and a considerable flow of CO2. If you don't leave room for the foam, it
will all come out through the air lock. If there is just a bit of solids
in the brew (say, a leaf from teh hops), it can block the airlock. With
the pressure mounting below it, the poor plastic thing can not hang on
to the lid, but will find itself approaching your ceiling at an alarming
speed. And all the foam that was being held back by it is now suddenly
liberated, and will exit the bucket with great haste. Predictably you
will never be allowed to brew in that kitchen again...

As to spices, I recommend being very careful. Start with a few grams (at
most), add them near the end of the boil, and taste the stuff. If the
spices overwhelm the bitterness in your wort, you know you have used
far too many spices, since the bitterness will mellow out faster, and
leave an overly spiced brew...

Don't worry too much, for even if things go a bit wrong,

  it will be beer anyway
