I have always used the double-bucket system, and have been very
satisfied with it.

I blieve the double-bucket system is a tad more effective, since the
sparging water can be more evenly distributed - with a manifold yourisk
having areas with very little sparging flow. But this effect is minimal,
and hardly worth worrying about.

I also believe that the risk of getting a stuck mash is smaller with a
double-bucket system, since there are more holes, and more area for the
wort to run out.

On the other hand, a double-bucket has always some dead space under the
bottom. This can be a drawback, but can also be used for good effect by
filling that space with a bit warmer water than what you intend to mash
with, to compensate for heat loss...

In the end, the decision must be yours. Choose what ever way seems most
reasonable to you, easiest to build, or tickles your fancy the most. In
the end

    it will be beer anyway
