I have such a system, built of two 40-liters plastic buckets. I have
used that for brewing double batches (40 liters) of strong things -
can't remember how much malt it was, but a lot! - and had no problems
with the bottom falling out. And I have *lots* of holes in my setup, as
many as I could find place for.
So that is one thing not to worry about.
