I have used elderflowers a few times, although not in a wheat beer. You can
see the details in beercalc, under
  H-46 Willage Elders
  H-53 Village Elders II

Both done about the same way, boiling the flowers for the last 10 minutes and
leaving them in the primary fermenter.

I used very fresh flowers, picked the same day. And never from under waist
high!

I was pleased with the results. It certainly was 

   beer anyway
