Addendum:   latex + LyX.

LyX is a GUI front end that allows a total latex novice to
jump right in and type into something that looks vaguely like
you'd recognize as a word processor interface.  It will also
manage your stylesheets, journal-specific templates (the IUCr
has a nice one), and so on.
