for the "online" backup i suggest 

export DESTBACKUPFILE=$(date +%Y%m%d).ldif

ldapsearch -x -b dc=example,dc=com -D cn=manager,dc=example,dc=com -w $(cat 
/etc/ldap.secret) > "$DESTBACKUPFILE"
