I tried to leave a comment. I hate blogger sometimes ... anyway ... A) Go Adam Go! You can do it! :) I have changed the way I cook everything, and it's still very tasty!!! I know some of those gourmet recipes just arent the same without the butter, but I now use olive oil, enriched with Omega 3's, in place of any butter I might of used. And if I need "butter" I use Smart Balance. You get used to the differences. I can barely eat anything really rich now, my body seems to be used the lighter counterparts. The biggest fat content we have these days is my half & half for coffee. :) And I'm not giving that up.
I know it's going to be super duper hard for you - but how about French Cuisine? The French diet is usually rather healthy and of course they are kings of moderation. And Japanese! Sashimi and sushi, seaweeds and veggies. Think outside the box! :D Still gourmet cooking! But Cooking Light style! :D Think of it as a challenge. I don't think you need to give up cooking gourmet - you just need a different style....
