Its just one more thing that can break. Installing PHP is very easy, just download the dmg file and run it. AS for CF etc, I use the war file versions of CF, Railo and Open BlueDragon, using Mod_ajp as the connector and JBoss as the app server. The entire setup took about 20 minutes to install, but most of that was playing around with the worker configurations.
One thing I've been meaning to play with is using VMWare to run a Windows 2008 Server with MS SQL Server and have the VM talk with the mac side. But since the MacBook is getting long in the tooth, I just may wait until I get a new one, and use the current one as a server.
